The “Igloo” Yule Log: InterContinental Lyon – Hotel Dieu’s Enchanted Winter Delight
For the holiday season, Vincent Thomassin, Pastry Chef of the InterContinental Lyon – Hotel Dieu, invites you on a journey into the snowy landscapes of the Far North. Inspired by the polar decor that will adorn the hotel, this Yule log is shaped like an igloo, peacefully guarded by two charming polar bears.
The yule log rests on a crisp base of hazelnut and chocolate, layered with a soft hazelnut sponge and crunchy praline with whole hazelnuts and pieces. For a refreshing touch, a yuzu cream and delicately floral Sichuan pepper whipped cream complete the ensemble. A light hazelnut mousse, dusted with fine white chocolate, wraps the creation, resembling a snow-capped igloo, while two white chocolate bears filled with yuzu marshmallow add a final, delicate tangy note.
