Chef Thomassin’s King Cake
For Epiphany 2026, the InterContinental Lyon – Hotel Dieu unveils an exclusive creation by Pastry Chef Vincent Thomassin: a refined, indulgent, and decidedly contemporary galette des Rois (King Cake).
Conceived as a true pastry experience, this galette features a delicately crisp, flaky cocoa brioche filled with hazelnut frangipane enhanced by hints of coffee. A subtle and elegant balance, both intense and comforting, that will delight those who appreciate rich and delicate flavors.


To complement this creation, the Chef partnered with Marguerite Porche to design a unique ceramic charm, representing a coffee bean—a poetic nod to the galette’s signature flavor.
Produced in a limited edition of only 60, Chef Thomassin’s galette des Rois embodies the art of hospitality and exceptional expertise of the InterContinental Lyon – Hotel Dieu, celebrating Epiphany with elegance and indulgence.
