For the festive season, Vincent Thomassin, pastry chef at the InterContinental Lyon – Hotel Dieu, invites you on stage for a ballet of flavours. Inspired by the grace of the stars and the delicacy of winter decorations, the The ballerina Christmas cake reveals itself like a prima ballerina.


Beneath its elegant silhouette lies a choreography of flavours and textures: a crispy base made with Piedmont hazelnuts and cocoa nibs, supporting a Joconde biscuit. The centre reveals a coffee-hazelnut praline where the roasted notes of Goneo coffee meet the sweetness of hazelnuts. The whole is enveloped in a chocolate-coffee mousse enhanced by a creamy Namélaka made with dark chocolate. As a finishing touch, the chocolate bustier and tutu embody the poetry of this creation: a log that combines elegance, balance and emotion, like a ballerina dancing under the lights.
